How do you tell what will happen in electrolysis?

so when you electrolyse something, one element goes to the anode (-) and one goes to the cathode (+), at least i think that's right. But how do you tell which element goes to which diode. Thanks guys, i have an igcse exam tomorrow so i really appreciate your help.
